Welcome!  I have found myself cooking & baking a lot more in the past year than ever before, since we try so many new things I often have people asking for recipes, tips, etc.  I figured I would just start doing posts about new things we try & our favorite recipes!

I'll try and start off with a good one that everyone will like, well.. everyone except for Tracey, haha :)

Baked Beans

Serves 6 when used as a side dish.

2 cans Bush's Baked Beans (I use the vegetarian style - i think the bacon in canned beans is absolutely disgusting)
1/2 a pepper (any color), diced
1/2 an onion, diced
4-5 slices of bacon
1/2c bbq sauce
1/4c vinegar
1/4c brown sugar
1-2tsp dijon mustard

Fry your bacon until about half done.  Saute peppers & onions in bacon fat, about 5 minutes.  Add remaining ingredients.  Mix together.

Pour into a baking dish (I use a 9x9), lay the half cooked bacon on top of the bean mixture.  Bake at 325 for 1.5 hours.

Note:  The last time I made it I used cooked bacon i had in the freezer, and chopped it up and mixed it in with the bean mixture - it was just as good!  I sauteed the peppers & onions in olive oil instead of the bacon fat.
